Medical Educators Consortium (NAVMEC) 2011) and clinical skills laboratories (CSLs) are playing an increasingly important role in veterinary curricula around the world.&#13;
Clinical training used to rely entirely on an apprenticeship model, as described in medical education over 100 years ago (Halsted, 1904), where the trainee shadows a&#13;
clinician, initially watching and then performing the procedure under the expert’s supervision. Although such teaching is still central to medical and veterinary training,&#13;
recent changes in veterinary education, including increasing student numbers and an expectation that where possible, the use of animals in teaching should be reduced, mean that there is a need to find additional ways to support learning. </text>

                <text>In this book, Jan Deckers addresses the most crucial question that people must deliberate in relation to how we should treat other animals: whether we should eat animal products. Many people object to the consumption of animal products from the conviction that it inflicts pain, suffering, and death upon animals. This book argues that a convincing ethical theory cannot be based on these important concerns: rather, it must focus on our interest in human health. Tending to this interest demands not only that we extend speciesism—the attribution of special significance to members of our own species merely because they belong to the same species as ourself—towards nonhuman animals, but also that we safeguard the integrity of nature. In this light, projects that aim to engineer the genetic material of animals to reduce their capacities to feel pain and to suffer are morally suspect. The same applies to projects that aim to develop in-vitro flesh, even if the production of such flesh should be welcomed on other grounds. The theory proposed in this book is accompanied by a political goal, the ‘vegan project’, which strives for a qualified ban on the consumption of animal products. Deckers also provides empirical evidence that some support for this goal exists already, and his analysis of the views of others—including those of slaughterhouse workers—reveals that the vegan project stands firm in spite of public opposition. Many charges have been pressed against vegan diets, including: that they alienate human beings from nature; that they increase human food security concerns; and that they are unsustainable. Deckers argues that these charges are legitimate in some cases, but that, in many situations, vegan diets are actually superior. For those who remain doubtful, the book also contains an appendix that considers whether vegan diets might actually be nutritionally adequate.</text>

                <text>This book is intended to give students a basic understanding of the various types of meat and poultry used in the food service industry, and how the terminology used by retail, wholesale, and food service customers varies. Meat cutting for restaurants and hotels differs slightly from meat cutting for retail. Restaurants and hotels sometimes use names of cuts on menus that are common in the kitchen vernacular or in other jurisdictions like Europe or the United States, while retail meat cutters are bound by Canadian regulations regarding labelling and marketing of meat products to consumers for retail.&#13;

Meat Cutting and Processing for Food Service is one of a series of Culinary Arts books developed to support the training of students and apprentices in British Columbia’s food service and hospitality industry. Although created with the Professional Cook and Baker programs in mind, these have been designed as a modular series, and therefore can be used to support a wide variety of programs that offer training in food service skills.</text>

                <text>The roles of veterinarians in society range from clinician to researcher, food inspector to enlisted military officer. Critical to the educational training of all of these veterinarians is the fundamental understanding of basic anatomy, both gross and microscopic. The knowledge of normal anatomy provides the basis of both physiology as well as pathology. Relating gross (e.g. physical exam findings) or microscopic changes (e.g. surgical biopsy) to specific disease processes first requires firm knowledge&#13;
of “normal”; hence, disease is detected as an alteration of normal! Teaching histology in the veterinary curriculum is the challenging process of conveying to the future&#13;
